Cooking means cooking perfectly at the right temperature after storing food in a refrigerator that cannot kill bacteria, but rather stops the increase in bacteria. Cooking food at the right temperature can kill bacteria.

How to prepare food safely?

World Health Organization (WHO) also provides ten guidelines for preparing food safely, namely:

First, choose food that has been processed.

Fruits and vegetables are better eaten raw, but there are also foods that are better eaten after being processed or cooked first. Food processing aims to improve safety and also so that food can last a long time.22 Vegetables are often eaten in a raw state that is as fresh vegetables. But raw vegetables are at risk of being contaminated with microorganisms such as roundworm eggs which are quite large. 23

Second, the food is well cooked.

Some raw foods, especially chicken, buffalo beef and unpasteurized milk are often contaminated with pathogenic bacteria that can cause disease. It is recommended that all parts of the raw food are cooked at the lowest temperature, reaching 70 C, so that pathogenic bacteria die.

Third, cooked food should be eaten immediately.

If the cooked food is left open, the bacteria will multiply and the longer it is left, the greater the risk. To be safe, then immediately eat dishes that have been cooked after the heat has disappeared.24

Fourth, cooked food is stored carefully.

If food is prepared more or if you want to store the remaining food, it is best that food is stored at high temperatures around 60 or stored at low temperatures around 10 C. This storage is very important if we store more than four or five foods. hour.

Fifth, reheat cooked food carefully.

Reheating food that has been stored in the refrigerator so that bacteria that might have had time to multiply during storage (although perfect storage can inhibit bacterial growth) can die.

Sixth, avoid mixing raw food with cooked food.

Foods that have been cooked can be contaminated when in contact with raw food ingredients. This contamination can occur immediately when raw chicken is placed close to cooked meat. Indirect contamination can also occur.

Seventh, wash your hands repeatedly.

Washing hands before starting to prepare food and each time after completing other work while preparing food. Wash your hands after preparing food ingredients such as fish, meat, or chicken before starting to handle other foodstuffs. If the hand is injured then the hand must be bandaged or covered before preparing food. Pets such as dogs, birds and especially cats are breeding grounds for diseases that can move to food through the hands.

Eighth, keep the entire surface of kitchen equipment or utensils clean.

Food is very easily contaminated with bacteria, so every surface of the equipment used to prepare food must always be kept clean. Napkins used to clean dishes, spoons and other kitchen utensils should be replaced with clean ones as often as possible, and boiled and washed before reuse to avoid microbiological animals that can cause disease. The mop that is used to clean the floor also needs to be replaced with a clean and washed one.

Ninth, protecting food from insects, rats and other animals.

Animals can carry pathogenic bacteria that can cause disease through food. So food must be kept in a tightly closed container to avoid contamination of chemicals and pathogenic bacteria carried by animals.

Tenth, use clean water.

Clean water is used to prepare hygienic food so that water used for cooking purposes is as important as drinking water. We recommend that you use boiled water before adding it to cooked food or to make ice. Moreover, water is used to prepare food for babies.
